Sometimes only a hot chocolate pudding will do. This pudding is absolutely divine and you’d never say it’s a Low Carb High Fat version. Teamed up with cream and some berries it’s a winner! The texture of this pudding is moist and smooth, like a soft cake.
- 2 eggs
- 2 tbsp Erythritol
- 1tsp liquid stevia
- 2 tbsp cocoa
- 2 tbsp almond flour
- 4 tbsp coconut flour (2tbsp coconut 2 macadamia flour)
- 1 tsp baking powder
- 1 cup cream
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- Place all ingredients in a deep microwaveable container.
- Microwave on high for 5 minutes.
If you don't have all 3 flours (coconut, macadamia and almond) you can substitute with one or the other but the combo of all seems to produce the best texture and flavour.
