Pork Crackling is something we always have in our grocery cupboard for snacking along with biltong. It’s full or gorgeous healthy saturated fat … exactly what you want on LCHF! You can use any spices or flavourings you want … we are partial to Paprika and Chinese 5 Spice … we normally do half and half and just mix it all up. You could just do salt on it’s own if you don’t like flavourings, or you could add Cayenne Pepper for some heat … the world is your oyster! Experiment.
RECIPE – Pork Scratchings / Crackling / Rind
Ingredients
- 1.2kgs Pork Skin
- 2 tsp Paprika
- 2 tsp Chinese 5 Spice
- Fine Salt
Instructions
- Preheat your oven to 200 Degrees Celsius
- Get 2 large roasting pans and place grids in them
- Place your pork skin in a single layer fat side up
- Sprinkle liberally with fine salt
- Sprinkle 1tsp of Paprika on the one pans skin
- Sprinkle 1tsp of Chinese 5 Spice on the other pans skin
- Turn the pork skin rind side up and repeat the salt and spice exercise
- Place in oven and let it cook until all of it is crisp - check frequently to avoid burning
- Remove from oven and break or cut into chucks
- Store in an airtight container
